Overview

On a serene and snowy morning, thick clouds of smoke rise as the rice taffy is taken out from a cast iron pot. It takes two and a half day to make this thing, which is neither a liquid nor a solid but something in between. The work starts with finding the right temperature for this brown rice taffy. The taffy is very sensitive to temperature. A little bit too hot, the taffy will stick to the fingers and even just a little bit too cold, it would break into the pieces when the taffy is stretched. Finally, when artisans find the right temperature for the taffy, the two, sitting side by side, shows off dazzling hand movements where the heavy and thick chunk of taffy stretches as if they are dancing. The brown color of the taffy gradually turns lighter as it is exposed to the air and the work of stretching the taffy goes on as ginger and sesame seeds are evenly added. When the taffy hardens, they are cut into pieces with a pair of scissor along the grain. That’s how the crunchy and sweet rice taffy by masters are made. This traditional rice taffy has continued for a fourth generation of a family since Prince Yangnyeong (1394-1468). Making it may appear to be similar to making of Western lollipop, which takes an enormous amount of sugar and made by a machine to stretch the candy. But in Korean rice taffy, it is our devotion, time and healthy ingredients that are put into.
